Spicy Turkey Meatloaf

Despite my tendency to order the most exotic fancy sounding thing on a menu, I also have a soft spot for some American classics like meatloaf and tuna noodle casserole. So imagine my delight when I came across a recipe on Food52 which quite literally spiced up the standard meatloaf with Apartmentcooker’s Spicy Turkey Meatloaf recipe.

Alterations: I used the same amount of spices for 1.25 lbs of ground turkey as this was the package size available at my local grocery. For the glaze, I used rice vinegar instead of apple cider and kicked up the amount of sriracha sauce.

Do-again?: This dish got a big thumbs-up from my boyfriend, who slipped it into the oven and gave it a quick second-basting while I was out at an appointment. I had leftovers as an open-faced sandwich the next day. The loaf itself was deliciously flavored and well spiced - I would likely play with the proportions of the glaze if I made this dish again. I think I would up the ketchup to sriracha ratio or add a bit of brown sugar to have it be both a bit sweet but keeping the heat.
