Mojito Shrimp and Garlicky Green Beans

I get too many emails. I sign up for multiple cooking newsletters and deal sites so every morning is a party in my inbox. My boyfriend calls a lot of it junk, but sometimes there are treasures in there, like this NoTakeOut recipe for Mojito Shrimp and Coconut Rice. Cocktail inspired cooking gets an A+ in my book. So I picked up some ingredients from the Santa Monica Farmers Market and paired them with some beautiful Garlicky Green Beans from Kalyn’s Kitchen. All in all, the ingredients cost about $15 - not too shabby for a seafood dinner on a Saturday night with spare ingredients for cocktails to pair it with!

Alterations: I followed the Mojito Shrimp recipe as is except I didn’t have any shredded coconut on hand for the rice. No changes for the green beans either.

Do-again?: The shrimp were delicious though they didn’t come out as caramelized as the website picture. The coconut rice was a bit bland — maybe it was the lack of the actual coconut shreds? The green beans were awesome and we’re going to use this technique in the future - can imagine it w0uld be good on any sauteed green veggie like zucchini, broccoli and peppers too.
