Rosemary, Fig and Goat Cheese Tarts

Since today is Friday, I decided to whip up a little afternoon happy hour snack to round out the workweek. My cousin gave me some leftover pastry shells from my aunt’s memorial service. Since my boyfriend is cutting out sweets for Lent, I opted to take them a more savory direction. I came across Willow Bird Baking’s recipes for a Quick Rosemary, Fig and Goat Cheese Tart and decided to adapt her recipe in mini-form for my pastry shells. 

Adaptations: I made a simple recipe even simpler. I opted to use creamy spreadable goat cheese from Trader Joe’s so I didn’t have to buy cream. My fig spread also came from TJ’s - the Fig Butter. A dab of fig jam, a dab of goat cheese, shavings of lemon rind and pepper and sprinkle of fresh rosemary leaves and 6 minutes in the oven at 350 and we were done. Literally took 7 minutes from start to finish.

Do-again?: This was a great, easy appetizer that is still refined. The rosemary and lemon rind give a really nice pop to the bite. Could definitely see myself making these at a future party.
