Since its summer squash season and our basil plant is going bonkers, I decided to look for a recipe to take advantage of both. In comes Food 52’s Zucchini with Basil, Mint and Honey - a perfect accompaniment for anything you grill this summer.
Alterations: I went with the pesto variation though next time I will use the whole leaves as this was a little oilier than I think it needed to be.
Do-again?: Yes, if our basil plant continues to be bountiful, I can see this recipe on our table several times this season.
