
Ahead of Memorial Day weekend, I picked up a package of Chicken Andouille Sausages from Trader Joe’s. I grilled some with some peppers to make sandwiches one night and decided I wanted to make a version of Red Beans and Rice with the remaining sausages using Paula Deen’s Red Beans and Rice with Andouille Sausages recipe as my guide.
Alterations: The only real changes I made was to use chicken sausages sauteed in a bit of oil (instead of bacon fat) and I cut down the amount of beans used. I also punched up the garlic a bit and used Gator Hammock Sauce as my hot sauce. I had a rice issue so ended up serving with a package of veggie rice instead.
Do-again?: It takes a while but doesn’t actually involve much work. It had the house smelling real nice too.
